BRAN MUFFINS 1 cup whole wheat flour 2 cups bran (or oatmeal or crushed cereal or a mixture of the three) 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 egg whites, lightly beaten (or egg replacer equal to 1 egg) 1 cup skim milk (I actually used rice milk) 1/2 cup blackstrap molasses 1/2 cup raisins Mis dry ingredients together in a large bowl. Add other ingredients and mix until just moistened. Spray two six-muffin tins with cooking spray. Fill muffin cups about 1/2 way with the muffin mix. Bake in a 400F oven for 20-25 minutes. Makes 12 EXTREMELY hearty muffins. Two of these babies keep my tummy happy all morning. Best out of the oven or reheated.
