How many holes?  -

do you put the jar lids flipped up or down during steam sterilizing, and up or down during incubation. i mean jagged edge up or down, rubberized seal up or down on a 2 piece lid? whats the difference if its taped forming a 1 piece lid. it should act the same (letting air in from under the screw part of the lid if the lid is loose) so what would it matter if the rubber side was facing up or down right? give me some info asap guys, im confused. thanks

I never had a problem rubberside-down.. until I made honeyywater jars. The rubber melted to the glass and I couldn't open it :)

I recommend rubberside-up since it create a 1-piece lid.. although sometimes the extra air that gets in is helpful for speedier colonization, it also open you up to more contams.

This is kind of a preference thing... but I always do rubber-side down.

The tape over the holes does allow for some air exchange if it is surgical tape... which I prefer.

Even masking tape will vent the co2 that builds up during colonization.

For unsticking stuck lids, I just run the tip of a spoon up the threads on the jar until the tip of the spoon is wedged between the bottom of the lid and the top of the thread on the jar and twist the spoon. I've always been able to break the vaccum seal on canning jars this way

I always go seal up. Preference thing? PF went seal up in his Tek, and the rubber does melt some. And if you go seal down on a honey jar you have canned it. Nothing delicate about fussing in a glovebox trying to get the lid free...

I've always went lid up, see no reason to change..

I wasn't addressing the Honey tek so you may have a point with that.

I never had to unstick a jar until until it was a fully colonized pf cake... and the spoon always got em off easily if you knew where to get the leverage.... this is done outside of a glovebox mind you.

Also... Maybee it's just mental but I always liked the idea of a "better seal" with the rubber down on the lid.

I also have a pc.... if I were going to sterilize the jars with the old pot with tight fitting lid like in the pf tek.... I'd go rubber side up to let in more steam.

Yeah I agree.
