For deep fat frying, they can be used to position and turn items in the frypan. After the basic dexterity for their use is mastered, one continues to find uses for them in handling hot items such as hot appetizers. While certain dishes use them for preparation at the table, that use is mostly for show than for practicality. My normal source for them is this oriental restaurant that serves them with the meal. Chuck Young P.S. I prefer to use the plain bamboo chopsticks rather than the more showy painted ones.
