Fresh pasta is much better than the dried cardboard shavings you buy in your neighbourhood grocery store. It can be a bit of a pain to make, but there are places around which sell the stuff, freshly-made every day. Here in a small pocket of civilization in "The Great White North" (aka Toronto) there are a few outlets. One of the best is Pastissima (with outlets on Eglington near Avenue Rd. and underneath First Canadian Place and also selling from Dinah's Cupboard in Yorkville). Another alternative is Bersani and Caravelli. Any simplified recipes for pasta production which do not involve a $50 machine would be welcome.
