Jamaican Pork Serving Size : 1 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 Cups Pork -- Cubed 1 Medium Onion -- Chopped 1 Tablespoon Oil 2 Tablespoons Cornstarch 2 Tablespoons Brown Sugar 1 Teaspoon Salt 1 Dash Pepper 2 Tablespoons Vinegar 2 Tablespoons Soy Sauce 1/3 Cup Ketchup 1/3 Cup Water 1 Can Pineapple Tidbits (14Oz) -- Reserve Syrup 1 Medium Green Pepper -- Cut In Strips Brown pork and onions in oil, combine sugar, cornstarch, salt and pepper. Gradually add vinegar , soy sauce, ketchup, water and syrup from pineapple tidbits. Add this mixture to the browned meat and cook, stirring until thickened. After 1/2 hour, add pineapple and green pepper. Cook at higher heat for another 5 minutes. Serve over rice.
