7-Up Cake Cake: 1 1/2 cups Butter 3 cups Sugar 5 eggs 3 cups flour 2 tablespoons lemon extract 3/4 c. 7-Up Glaze: 1/2 cup powdered sugar enough 7-up and fresh lemon juice to moisten into a glaze. Preheat oven to 325¡F. Grease and flour one fluted Bundt pan. Cream together sugar and butter, until light and fluffy. Add eggs, one at a time, beating well after each... Add flour, beat some more. Blend in the lemon extract and 7-Up ( if you don't have lemon extract, use more lemon juice, and a little less 7-Up). Put batter into pan, bake at 325¡F for 1 hour-1 hour 15 minutes.. or until a toothpick inserted comes out clean. Let cake cool a bit and remove from pan. Mix glaze and drizzle over the top Slice and enjoy.. really lemon-y and good.
