Awe13.170 net.cooks utcsrgv!utzoo!decvax!duke!chico!harpo!npois!houxi!houxg!lime!we13!rao Fri Feb 19 08:02:46 1982 The Perfect Chocolate Cake The Perfect Chocolate Cake 1 cup unsifted unsweetened cocoa 2 cups boiling water 2 3/4 cup sifted all purpose flour 2 teaspoons baking soda 1/2 tsp salt 1/2 tsp baking powder 1 cup butter 2 1/2 cups granulated sugar 4 eggs 1 1/2 tsp vanilla 1. Make cake: In a medium bowl, combine cocoa with boiling water mixing with wire whisk until smooth. Allow to cool completely. 2. Sift flour with soda, salt and baking powder. Preheat oven to 350. Grease and lightly flour 3 9" cake pans. 3. In a large bowl of an electric mixer, at high speed, beat 1 cup butter, sugar, eggs and vanilla until light, ~5 mins. At low speed beat in flour (in fourths) and cocoa ( in thirds) beginning with flour and ending with flour. Do not over beat! Divide into pans and smooth tops. 4. Bake 25-30 mins until surface springs back. Cool in pans 10 mins Carefully loosen sides and remove from pans and cool. Frost! You can use any frosting that you like, I chose to use chocolate whipping cream, because it was light! Chocolate Whipping Cream Mix in a large bowl of an electric mixer the following: 2 cups whipping cream 1/2 cup powdered sugar 3 tbls cocoa 1 tsp vanilla Stir with a wire whisk initially, once mixture has begun to dissolve whip using electric mixer until proper consistancy. Frost cake generously.
